Preheat oven to 325 degrees F. In a saucepan, heat the heavy cream and milk over medium heat until it just begins to steam and tiny bubbles form at the edges — do not boil. This is the gentle approach. Remove from heat.

Tip: Scalding, not boiling. There IS a difference. In cream, and in how you treat people at a border.

In a separate bowl, whisk the egg yolks and sugar together until pale and slightly thickened, about 2 minutes. Very slowly drizzle the hot cream into the yolks while whisking constantly — this is called tempering. It prevents the yolks from scrambling. Add vanilla and salt. Strain through a fine-mesh sieve into a clean bowl.

Tip: Tempering is essential. You cannot just dump hot liquid onto fragile yolks — they need a gradual, humane introduction. The metaphor writes itself and it is not funny.

Divide the custard evenly among six ramekins. Place the ramekins in a deep baking pan. Pour hot water into the pan until it reaches halfway up the sides of the ramekins — this is a water bath (bain-marie). It ensures even, gentle cooking. The ramekins are now individual holding cells of custard. Bake for 40-45 minutes until the edges are set but the centers still jiggle slightly.

Tip: Each ramekin is isolated. Each one bakes alone. The water bath is the one thing connecting them, and it will be removed as soon as cooking is done.

Carefully remove ramekins from the water bath and let cool to room temperature. Then refrigerate for at least 4 hours, or overnight. The custard must be completely cold and set before the final step.

Tip: The waiting is the hardest part. For the custard to set, and for families to be reunited. One of these things actually happened on schedule.

When ready to serve, sprinkle 1 tablespoon of superfine sugar evenly over each custard surface. Using a kitchen torch, caramelize the sugar by holding the flame 2-3 inches above and moving it continuously until the sugar melts, bubbles, and hardens into a glassy amber shell. Let it cool for 60 seconds to harden.

Tip: The torch creates a hard barrier between the outside world and the soft interior. Crack through it with a spoon. That's the only instruction here that should apply to dessert.

Garnish with fresh berries. Serve immediately — the sugar shell will soften after about 20 minutes. Eat in contemplative silence, or donate to a reunification organization, or both.
